Christmas Black Cake
It would not be a Saint Lucian Christmas without the Saint Lucian fruit cake or what is known as black cake. Long before offices and homes are decorated, before Christmas carols can be heard on the radios, or persons know what they will purchasing for loved ones, an assortment of fruits have been soaking in rum(Remember, it would not be Caribbean if some kind of rum was not involved).
There are many variations of the black cake throughout out the Caribbean. Songs have been sung about the black cake, demonstrating its importance in the Christmas festivities.
Persons are always in search of the perfect black cake (if they are unable to bake it, like yours truly), or claim that they have best recipe. Arguments have ensued from persons vehemently defending the quality of their black cake.

St Lucia Fruit Cake – One Pound Recipe
3/4 lbs Margarine
3/4lb Brown sugar
1 1/2 pounds Mixed fruits
Mixed Peel (opt)
1lb Self Raising Flour
2 cups Alcohol
1tbsp Almond Essence
2tsp Ground Cinnamon
Soak fruits as long as desired in alcohol.
(2)Preheat oven to 215c when cake begins mixing, drop temp to 140c.
(3)Sift together flour, cinnamon, nutmeg and salt.
(4)Cream the margarine and sugar for about 40mins using an electric mixer.
(5)Add the lightly beaten eggs a little at a time to the butter and sugar mixture.
(6)Add essence and browning.
(7)Stir the flour and fruit mixture into the creamed batter in alternate batches. DO NOT BEAT THE MIXTURE.
(8)Pour into greased baking pan.
(9)Bake for two hours or until skewer inserted comes out clean.
(10) (Optional) Pour alcohol over cake just as it comes out of the oven.
Pouring the rum over it is optional if you do not use alcohol but is usually done to enhance the flavour here in St Lucia.
